Here are a few of my starter tips:
✅ Meal Prep is Key: Preparing your meals ahead of time helps avoid last-minute cravings or resorting to non-vegan options.
✅ Protein Power: Chickpeas, tofu, tempeh, lentils, and quinoa are your friends.
✅ Spice It Up: Flavor is everything—don’t shy away from herbs, spices, and sauces!🍴 Recipe Share: Creamy Vegan Mushroom Pasta
8 oz fettuccine (or your favorite pasta)
2 tbsp olive oil
3 cloves garlic, minced
2 cups sliced mushrooms
1 cup unsweetened almond milk
1 tbsp flour (or cornstarch) to thicken
Salt, pepper, thyme to taste
Sauté garlic and mushrooms, add flour and slowly whisk in almond milk. Stir until creamy, season, and toss with cooked pasta. So good!

One of my go-to veggie dishes when I want something hearty and nourishing is Chop Suey—packed with mixed vegetables, light soy flavor, and a touch of sesame oil. It’s super versatile, too—you can pair it with rice, noodles, or even enjoy it on its own.
