Ingredients:
2 whole Nila fish (cleaned and gutted)
1 tsp salt
1 tbsp lime juice
2 tbsp cooking oil
3 kaffir lime leaves
1 tsp sugar
Balado Sauce:
5 red chilies
3 bird’s eye chilies (adjust to taste)
5 shallots
3 cloves garlic
2 tomatoes
1 tsp shrimp paste (optional)
½ tsp salt
Instructions:
Prepare the Fish:
Rub the Nila fish with salt and lime juice. Let it sit for 10 minutes.
Heat oil in a pan and fry the fish until golden brown. Set aside.
Make the Balado Sauce:
Blend or crush red chilies, bird’s eye chilies, shallots, garlic, tomatoes, shrimp paste, and salt into a coarse paste.
Heat a little oil in a pan, sauté the spice paste until fragrant.
Add kaffir lime leaves and sugar, then stir well.
Combine and Serve:
Add the fried Nila fish into the pan, coat with Balado sauce evenly.
Cook for another 2 minutes, then remove from heat.
