500g beef, chicken, or fish (cut into pieces)

2 lemongrass stalks (bruised)
3 kaffir lime leaves
2 bay leaves
2 tbsp cooking oil
1 tsp salt
1 tsp sugar
Spice Paste (Blend Together):
5 shallots
4 garlic cloves
3 red chilies
2 tsp coriander powder
1 tsp turmeric powder
1 tsp cumin powder
1 cm ginger
1 cm galangal
Instructions:
Heat oil in a pan and sauté the spice paste until fragrant.
Add lemongrass, kaffir lime leaves, and bay leaves. Stir well.
Add the meat and cook until it changes color.
Pour in coconut milk, stir occasionally to prevent curdling.
Season with salt and sugar. Simmer until the meat is tender and the sauce thickens.
