Ingredients:
200g ground pork
4 eggs
1 small carrot, finely chopped
2 spring onions, sliced
1/2 onion, finely chopped
2 cloves garlic, minced
1 tbsp soy sauce
1/2 tsp salt
1/2 tsp pepper
1 tbsp cornstarch
2 tbsp cooking oil
For the Sauce:
200ml tomato sauce
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sugar
1/2 tsp salt
1/2 tsp white vinegar
1 tsp cornstarch (dissolved in 2 tbsp water)
100ml water
Instructions:
Prepare the Omelet:
In a mixing bowl, beat the eggs and add ground pork, carrot, onion, spring onion, garlic, soy sauce, salt, pepper, and cornstarch. Mix well.
Cook the Omelet:

Heat 2 tbsp of oil in a pan over medium heat.
Pour in the egg mixture and spread evenly.
Cook until the bottom is golden brown, then flip carefully. Cook for another 3-4 minutes until fully cooked. Remove and set aside.
Make the Sauce:
In the same pan, add tomato sauce, soy sauce, oyster sauce, sugar, salt, and white vinegar. Stir well.
Pour in water and let it simmer for 2 minutes.
Add the cornstarch slurry, stir until the sauce thickens.
Serve:
Place the omelet on a plate and pour the sauce over it.
Garnish with additional spring onions if desired.
