    Ingredients:

    For the pork:

    1 whole pig (about 8-10 kg) or 2-3 kg pork shoulder or belly, cleaned and prepared
    2 tbsp vegetable oil
    Salt to taste
    Banana leaves (optional, for wrapping during roasting)
    For the spice paste (Bumbu):

    5-6 shallots, peeled
    5-6 cloves garlic, peeled
    3 lemongrass stalks, chopped
    5-7 kaffir lime leaves
    2-inch piece of turmeric, peeled (or 1 tsp turmeric powder)
    2-inch piece of ginger, peeled
    2-inch piece of galangal (optional)
    5-6 dried red chilies (adjust to your spice preference)
    1 tsp coriander seeds
    1 tsp cumin seeds
    1 tsp black peppercorns
    1 tbsp palm sugar or brown sugar
    1 tbsp salt
    1/2 cup coconut milk (optional, for extra richness)
    For the sambal (dipping sauce):

    3-4 fresh red chilies (adjust to taste)
    3-4 shallots
    1 tbsp palm sugar
    1 tbsp salt
    1 tbsp lime juice
    1/4 cup water
