    Ingredients:

    1 whole chicken, cut into pieces

    400 ml coconut milk

    200 ml water

    3 kaffir lime leaves

    2 bay leaves

    1 lemongrass stalk, smashed

    2 cm galangal, smashed

    2 tbsp cooking oil

    Salt and sugar to taste

    Spice Paste:

    5 shallots

    3 cloves garlic

    4 red chilies (adjust to taste)

    3 cm turmeric

    2 cm ginger

    3 candlenuts

    1 tsp coriander powder

    1/2 tsp cumin powder

    Instructions:

    Prepare the spice paste: Blend all the spice paste ingredients into a smooth paste.

    Sauté the spices: Heat oil in a pan and sauté the spice paste until fragrant.

    Add aromatics: Add kaffir lime leaves, bay leaves, lemongrass, and galangal. Stir well.

    Cook the chicken: Add the chicken pieces and stir until coated with spices.

    Simmer the curry: Pour in water and let it simmer until the chicken is tender.

    Add coconut milk: Pour in coconut milk, stir gently, and let it cook until the sauce thickens.

    Season to taste: Add salt and sugar to balance the flavor.
