Ingredients:
1 whole free-range chicken (cut in half or flattened)
3 tablespoons cooking oil
2 tablespoons sweet soy sauce
1 teaspoon salt
1 teaspoon lime juice
Spice Paste:
5 red chilies
3 bird’s eye chilies (adjust to taste)
4 cloves garlic
6 shallots
2 candlenuts
1 teaspoon shrimp paste (grilled)
1 teaspoon coriander powder
1 teaspoon palm sugar
1 small tomato (chopped)
Instructions:
Prepare the Chicken:
Clean the chicken and cut it in half or flatten it.
Rub it with salt and lime juice, then let it sit for 15 minutes.
Make the Spice Paste:
Blend all the spice paste ingredients until smooth.
Heat oil in a pan and sauté the spice paste until fragrant.
Add sweet soy sauce and stir well.
Marinate the Chicken:
Coat the chicken with the sautéed spice paste.
Let it marinate for at least 30 minutes for better flavor absorption. Oke4d
Grill the Chicken:
Grill over medium heat charcoal while basting with the remaining marinade.
Flip occasionally until the chicken is evenly cooked and slightly charred.

Serve hot with steamed rice, fresh vegetables, and sambal.
