    Ingredients:
    For the Chicken:
    1 whole chicken (cut into 4-6 pieces) or 500g chicken thighs/drumsticks
    4 cloves garlic, minced
    1 tsp coriander powder
    1 tsp turmeric powder
    1 tsp salt
    1/2 tsp white pepper
    200ml water
    Oil for frying
    For the Sambal (Spicy Chili Sauce):
    5-6 red chilies (adjust to your spice preference)
    3 bird’s eye chilies (optional, for extra heat)
    4 shallots
    3 cloves garlic
    1 tomato, chopped
    1 tsp shrimp paste (terasi), toasted
    1 tsp palm sugar or brown sugar
    1/2 tsp salt
    2 tbsp oil (for sautéing)
    1 tbsp lime juice
    For Serving:
    Steamed rice
    Fresh vegetables (cucumber, lettuce, basil leaves)
    Fried tofu & tempeh (optional)
    Instructions:
    1. Prepare the Chicken:
    In a bowl, mix garlic, coriander powder, turmeric, salt, and white pepper. Add water and stir well.
    Marinate the chicken in this mixture for at least 30 minutes (or overnight for better flavor).
    Boil the chicken in the marinade over medium heat until the water is reduced and the chicken is fully cooked.
    Remove the chicken and let it cool for a few minutes. Toto Macau
    2. Fry the Chicken:
    Heat oil in a deep pan over medium heat. Fry the chicken pieces until golden brown and crispy.
    Remove from the oil and drain on paper towels.
    Using a mortar and pestle or rolling pin, lightly smash the fried chicken to make it “penyet” (smashed).
    3. Make the Sambal (Spicy Chili Sauce):
    In a pan, heat 2 tbsp oil and sauté the chilies, shallots, garlic, and tomato until soft.
    Add the toasted shrimp paste, palm sugar, and salt. Mix well.
    Transfer to a mortar and pestle or blender, then grind into a rough paste.
    Add lime juice and mix.
    4. Serve:
    Place the smashed fried chicken on a plate, and spread the sambal on top.
    Serve with steamed rice, fresh vegetables, and optional fried tofu & tempeh.
