Ingredients:
For the Steamed Clams:
1 kg fresh clams (cleaned and soaked in salt water for 1 hour)
1 liter water
2 bay leaves
1 stalk lemongrass (bruised)
1 tsp salt
For the Peanut Sauce:
150 grams roasted peanuts (ground into a paste)
3 cloves garlic (minced)
5 red chilies (adjust to taste, finely chopped)
2 tbsp sweet soy sauce
1 tbsp lime juice
1 tbsp palm sugar (or brown sugar)
1/2 tsp salt
200 ml water
1 tbsp cooking oil
Instructions:
Steaming the Clams:
In a pot, boil 1 liter of water with bay leaves, lemongrass, and salt.
Add the clams and steam for about 5-7 minutes until they open. Discard any unopened clams.
Drain and set aside.
Making the Peanut Sauce:
Heat oil in a pan, then sauté garlic and chilies until fragrant.
Add ground peanuts, sweet soy sauce, lime juice, palm sugar, and salt. Stir well.
Pour in water gradually while stirring until the sauce reaches a thick but pourable consistency. Simmer for 3-5 minutes.

Serving:
Arrange the steamed clams on a plate and pour the peanut sauce over them.
Garnish with chopped cilantro or fried shallots if desired.
